RECIPE ALERT: Pumpkin Protein Bars // (Vegan)

Hi Fit Fam,

I hadn’t realized it was fall until I walked into my local Starbucks and saw that Pumpkin Spice Lattes were back! (One of my many guilty pleasures). After indulging, I found myself craving pumpkin! Alas these protein packed, dairy free and high fiber bars were born!

(Makes 10 bars)

Ingredients:

Bars:

  • 1 can Pumpkin Puree
  • 1-2 cups Unsweetened Almond Milk (used throughout recipe to help blend ingredients)
  • 3 tbsp Ground Flax
  • 3 tablespoons Chia Seeds
  • 2 packs Stevia
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 2 scoops Vanilla Chai Protein Powder (Vega brand)
  • 1 tsp Vanilla extract
  • 1 tsp Pumpkin Pie Spice

“Cream Cheese” Frosting:

  • 3 tbsp Vegan Cream Cheese
  • Vanilla extract
  • Pumpkin Pie Spice
  • Stevia

Directions

  1. Preheat oven to 350 degrees
  2. Add Pumpkin Puree to blender, add small amounts of Almond Milk at a time, blend till smooth
  3. Mix in Baking Powder, Baking Soda, Vanilla, Pumpkin Pie Spice and Stevia, blend
  4. Mix in Flax,
  5. Mix in Chia
  6. Add Vanilla Chai Protein Powder
  7. Spread on baking sheet
  8. Bake for 15-18 minutes
  9. Cut into 20 small square
  10. Let cool for 10 minutes
  11. While cooling mix together all frosting ingredients
  12. When cool, spread frosting in the center and sandwich two squares together
